I receive a lot of lovely, personal comments on those of you that are making the Soup for Your Saturday recipes.. and so, here is another Winner to add to your Table this weekend.
Zesty Potato Soup – My Family LOVES this recipe, and I usually serve it with our Buttery Cornbread that you can try here.
Zesty Potato Soup – Soup For Your Saturday- One September Day
Remember, I wouldn’t use a recipe unless it was easy, and delicious for my family.
( I make this recipe times 4 for our crowd)- to help you plan.
4 Large Potatoes
2 Cups Water
1 tsp Dried Minced onion
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup Milk
4 ounces processed cheese ( cubed) ( like Velveeta)
1/3 Cup chopped green chilies ( we do not use this, but you may try it for flare!)
2 Tablespoons butter
1 Tablespoon chicken bouillon granules
2 teaspoons minced fresh parsley
Crumbled Bacon
1 Bag (or less) of frozen corn
In a Large saucepan, combine the potatoes( peeled and cut), water, onion, garlic, salt, and pepper; bring to a boil over medium heat. Reduce heat; cover and simmer for 15-20 minutes until potatoes are tender. ( Do NOT Drain.) Mash potatoes until semi-smooth, thicker. Add remaining ingredients, cook and stir until cheese is melted. Add bacon and corn last. Serve with warm Buttery Cornbread and sprinkle/garnish with fresh croutons if desired. This is easy and delicious.
